Why will a bundle of long hair not stay in a knot?

Everything else seems too, like string, rope, wire, etc. but pull a knot as tight as you want in a bundle of human hair and it falls out as soon as you let go!

everything else is a single unit that is textured. Hair is multiple units that are relitively untextured. When you tie hair in a knot, not all of the hairs have something to pull against. When you tie a rope, the rope is caught by itself and stays, but the hairs in the middle fo the knot are really just being curled around a bit, but dont have anything to bite into to keep them like that, they just slide right past each other. a knot needs to lock around itself to stay and there are just too many hairs not doing that for you to be able to tie your hair up like that.

because the hair is healthy. thats the only explanation ive ever heard for it.

Perhaps the texture of the hair is silky smooth. thus. it wont stay in a knot?
